METHOD:
Grind vegetables in a blender except for garlic. Brown everything with a drop of oil. Once browned add meat, cook well and simmer with white wine until reduced. Go on cooking for several minutes more and then cool down in a bowl. Meanwhile put herbs, 2 eggs, parmesan cheese, nutmeg, 100g bread crumbs, olive oil paté and finally meat in a blender, grind for a few minutes and then hold it in the fridge 30 minutes at least. Shape balls as little as an olive, pass into the flour, then in the beaten eggs and finally in the bread crumbs. Fry them in hot oil and serve lukewarm.
