Olive (60%), dressing based on extra virgin olive oil with lemon, salt, citric and ascorbic acid.

Production:
Our patès are made only by selected first quality grounded and seasoned brine olives. Then we mix the cream with our extra virgin olive oil with lemon. Our GREEN OLIVES PATE’ WITH LEMON is ready to be potted and pasteurized. Despite executing an handmade process, the farm respects all the sanitary measures provided for by the law. (HACCP system).
Tasting:
To the smell it gives a fresh and pleasant sensation, to the taste it presents a strong flavour made by green olive and lemon, skillfully balanced. It’s perfect for bruschetta, canape, vol-au-vent, to be served as appetizers or light entrées, simple but enjoyable. Taste it also on a slice of apple.

RECIPE
Revised stuffed olives from Ascoli.

PREPARATION TIME: 40 minutes



INGREDIENTS:
300 gr mixed minced meat (chicken, pork, beef)
1 can of green olives paté with lemon
100 gr parmesan cheese
200 gr bread crumbs
50 gr flour
2 carrots
1 celery
1 clove of garlic
1 glass of dry white wine
4 eggs
Sabina Dop oil for frying
Salt
Half red onion
Parsley
Basil
Nutmeg
METHOD:
Grind vegetables in a blender except for garlic. Brown everything with a drop of oil. Once browned add meat, cook well and simmer with white wine until reduced. Go on cooking for several minutes more and then cool down in a bowl. Meanwhile put herbs, 2 eggs, parmesan cheese, nutmeg, 100g bread crumbs, olive oil paté and finally meat in a blender, grind for a few minutes and then hold it in the fridge 30 minutes at least. Shape balls as little as an olive, pass into the flour, then in the beaten eggs and finally in the bread crumbs. Fry them in hot oil and serve lukewarm.
